The wine cellar designed and built to optimize each stage of winemaking, combines Chianti tradition the development of winemaking methods: the maceration of the grapes takes place in ours features pink barrels, large concrete tanks dating back to the 70s, appropriately restored and equipped with a modern system for controlling the temperature. Depending on the type of wine produced, the maturation period is more or less long and takes place insidebotti steel or insidebarrique in oak barrels 5 and 10 hl, located in a special room with temperature and humidity control.

Vinification
and maturing wine

Our cellar is the place where the phase occurs maturity and aging of wine, phase in which the wine, resting in the barrels, acquires its most characteristic flavors.

Our Company opts for different types of aging according to the various types of wine to be offered to the final consumer: for wine white wine and the resè wine, being wines that must be consumed young and fresh, this period can only last a few months, at most two or three, while for Red wines important, this phase can last for many years.

For both whites, rosés and reds, a aging in steel barrels. The red wines, in addition to a refinement in steel, are also refined in wooden barrels, such as our foots of hill, the Rocca or Montalbe who make a aging in wood, in our case Barrique oak, ranging from 12 to 30 months.

The microporosity of the wood allows very slow exchanges of oxygen that cause variations of the color, perfume and taste of wine

All the phases of winemaking and maturation of the wine are periodically checked by our winemaker and by the cellar workers who regularly carry out wine tests to guarantee their correct maturation.
