to bottling
The wine cellar designed and built to optimize each stage of winemaking, combines Chianti tradition the development of winemaking methods: the maceration of the grapes takes place in ours features pink barrels, large concrete tanks dating back to the 70s, appropriately restored and equipped with a modern system for controlling the temperature. Depending on the type of wine produced, the maturation period is more or less long and takes place insidebotti steel or insidebarrique in oak barrels 5 and 10 hl, located in a special room with temperature and humidity control.

Vinification
and maturing wine
Our cellar is the place where the phase occurs maturity and aging of wine, phase in which the wine, resting in the barrels, acquires its most characteristic flavors.
Our Company opts for different types of aging according to the various types of wine to be offered to the final consumer: for wine white wine and the resè wine, being wines that must be consumed young and fresh, this period can only last a few months, at most two or three, while for Red wines important, this phase can last for many years.
For both whites, rosés and reds, a aging in steel barrels. I vini rossi, oltre ad un affinamento in acciaio, vengono affinati anche in botti di legno, come i nostri Piè di colle, La Rocca o Montalbe che effettuano un aging in wood, nel nostro caso Barrique oak, che va dai 12 fino ai 30 mesi.
La microporosità del legno permette lentissimi scambi di ossigeno che causano variazioni del colore, del profumo e del gusto del vino
Tutte le fasi di vinificazione e maturazione del vino sono periodicamente controllate dal nostro enologo e dagli addetti alla cantina che regolarmente effettuano test sul vino per garantirne la corretta maturazione.
